since ruby arrived, for some reason i haven't been making lunches and taking them to work. i haven't been buying lunches either. so i just work all day, then go pick her up and eat a bunch of junk when i get home. this isn't good for me, i know.
so, i bought myself a new (very nerdy) lunch box in an effort to encourage myself to pack a nice lunch for work. so far, 2 for two and i have to admit although it takes time i am enjoying thinking up what to put in the little boxes. this kind of deal is called a bento box which is basically the japanese word for lunch box. meals on the go have been packaged like this since the 1800s in japan.
anyway, here is what i came up with for my first two days. i hope the novelty doesn't wear off as, i love having a nice fresh lunch to eat.
day 1- salad: grape tomatoes red, yellow, green bell peppers, stuffed spanish olives, feta, cilantro and basil infused olive oil; key lime yogurt with wheat germ; slivered almonds, organic dried cranberries, honey roasted soy nuts; baby carrots
day 2- left over veggie spaghetti (made my leeser, mmmm); sliced nectarines; spinach salad with grape tomatoes and cilantro; orange essence prunes; aged very sharp white cheddar cheese.
p.s. if anyone is interested in a box like this, i got mine here.

painty - you are so damn cute sometimes, i can't stand it. i am very excited about your bento lunches - good for you.
watch out for the tomatoes, in case you haven't heard there is a salmonella outbreak.
hope your family wasn't affected by floods in Racine.

Those lunches look darn good! Would you make one for me every day??? I sure get tired of packing lunches every morning for work. Glad you found a cool lunch box.
